This is a Greek/American lamb and beef mixture version of the traditional Greek pork or lamb Gyros (or Gyro). Serve on warm pita bread with tzatziki sauce, and thinly sliced onion, tomato and lettuce. Remove from refrigerator and allow the chops to come to room temperature; it will take. Remove lamb from the marinade and leave any onions on that stick to the meat.

The ingredients needed to make Grilled Lamb:
  1. Prepare 4-5 lbs de-boned leg of lamb
  2. Prepare 1/2 cup soy sauce

  4. Make ready 4 Table spoons Dijon Mustard
  5. Prepare 3 Tablespoons Olive oil
  6. Prepare 3 Tablespoons grated Ginger (don't use dry Ginger!)
  7. Prepare 4 Tablespoons minced garlic

Place rosemary sprig on lamb; roll up and tie with kitchen string, leaving a portion of the sprig exposed. If desired, sprinkle with additional salt and pepper. Place chops on grill over medium heat. Spoon half of sauce over chops and sprinkle with salt and pepper.

Instructions to make Grilled Lamb:
  1. Mix all ingredients.
  2. Place lamb in a large Ziploc bag, Pour ingredients into bag, then seal bag. Place in fridge and marinate lamb at least 6 hours, or overnight
  3. Preheat grill to 500 F. Bring lamb to room temperature then grill lamb for 20 minutes for medium rare, turning over once. 25 minutes for medium.
  4. Remove from grill, cover with foil and let lamb rest for 10 minutes
  5. Slice lamb into 1/4 inch slices and serve on pre-warmed plates
  6. PS: You can place the leftover marinade in a pan, bring to boil, add 1 table spoon of butter then simmer for 7 - 8 minutes and serve with the lamb

Place chops on grill over medium heat. Spoon half of sauce over chops and sprinkle with salt and pepper. Turn chops and spoon remaining sauce over chops; sprinkle with salt and pepper. The rack will gain a couple of degrees in temperature after you remove it from the grill, so you can take it off when it is a few degrees lower than the target. Past that temperature the meat will slowly begin to dry out.
