Adding chicken (store-bought rotisserie chicken works well), makes this pasta salad a complete meal. In a large bowl, toss the pasta, chicken, oil and garlic powder. Drain in a colander, rinse with cold water and shake until very dry. Grill chicken until no longer pink and the juices run clear.

  1. Cook pasta until desired softness…keep in mind that pasta will firm up when it is run through cold water, so cook a little longer than normal.
  2. In a large bowl, mix the mayo, spices, diced pepper, chicken (drained), artichokes (drained, but I added a couple tablespoons of the liquid to the dressing). Mix gently to combine.
  3. Once pasta is cooked, run it under cold water and drain well. Then add the pasta to the other ingredients and stir gently. Fold in Parmesan cheese.
  4. Taste to adjust seasoning for your tastes. Cover and chill until ready to serve.

Drain in a colander, rinse with cold water and shake until very dry. Grill chicken until no longer pink and the juices run clear. Remove from grill, and chop into bite-size pieces. Drain and transfer to large bowl. Season chicken breasts with garlic powder, salt, and pepper.
