Tip the noodles into a large bowl, then toss together with the carrot, cucumber, remaining ginger, most of the spring onion and two-thirds of the dressing, and drop in little piles onto the lettuce leaves. To prepare the salad: Whisk mirin and ginger in a small bowl. Place steak in a shallow baking dish or pie pan. Pour mirin mixture over the steak; turn to coat.

Stirring frequently so they don't stick to bottom of pot. Once done drain the water and add noodles back into pot. Add the beef tips and gravy. Mix well and heat on medium til heated through.
