- Get 2 Kg Leg of mutton or Shoulder of Lamb
- Make ready 1 big onion
- Make ready Lots of garlic
- Make ready Half a jar of pesto
- Make ready 2 cans plum tomatos

Instructions to make Kleftico (in a slow cooker):
- First pre heat the slow cooker. Then cut the mutton into 4 or 5 big chunks and brown in a thick pan. Make sure there is bit of fat on the meat. Without some fat it wont be nice. 1. When the meat is nice and brown add chopped garlic onion tomato and pesto and bring to the boil
- Put 4 or 5 sprigs of Rosemary into a pre heated slow cooker
- Then pour the meat and liquid on top. This way the Rosemary infuses lots of flavour into the meat as it cooks.
- Cook on low for HOURS. I did mine for 6 hours but longer is OK too
- At the end of the cooking time I had far too much liquid so I returned it to the pot and reduced the liquid on a high heat.
- I served with a potato & veg crush. You could do rice or roast spuds too if you want.
Enjoy leftovers the next day in warm flatbread. Last summer my manager decided to go for holidays in Greece. He did travel to some places but stayed longer at Paros where he surfed and did try a lot of the local dishes but also some more traditional ones. Lamb kleftiko is a very easy recipe to make. You can cook lamb kleftiko in the oven or in a crockpot or slow cooker.
