Pilaf (US spelling), or pilau (UK spelling) is a rice dish, or in some regions, a wheat dish, whose recipe usually involves cooking in stock or broth, adding spices, and other ingredients such as vegetables or meat, and employing some technique for achieving cooked grains that do not adhere.

The ingredients needed to make Pilau:
  1. Take Pilau whole (as required)
  2. Get 1 1/2 cup rice, washed
  3. Get 1/2 kg boneless lamb
  4. Take 2 tbspn ginger garlic paste
  5. Take to taste Salt
  6. Make ready 4 large onions, sliced
  7. Make ready 3 tbspn cookong oil

Steps to make Pilau:
  1. Cook your meat until it's soft and well dry
  2. While your meat is cooking, prepare you whole spices in a pan by roasting them, make sure the cardamoms are split
  3. Let your spices roast until there's a beautiful aroma and be careful not to burn them then grind them or pound them into powder
  4. To your cooked meat add in the oil, then the onions and the ginger garlic paste and cook until they are brown (this is what gives your pilau a good brown color) careful not to burn them too
  5. Add in your whole spices and stir for 30 seconds to 1 minute then add in the rice and give it a good stir then add the salt, you can sprinkle in whole spices too at this stage
  6. Add in 3 cups of hot water then cover, allow it to boil on medium high for 3-5 minutes then reduce the heat for 10-15 minutes drpending on the type of your rice
  7. Serve with kachumbari or pilipili ya kukaangwa

Its golden yellow colour is made by turmeric, a natural food colouring agent, which dyes the rice during the cooking process. Pilau is best served with kachumbari (photographed in the plating) it's a simple tomato salad that consists of sliced tomato, red onion, cilantro & a spicy pepper.
