Add lamb back to dutch oven then add broth, wine, Worcestershire sauce, rosemary, and bay leaves. Bring to a boil then reduce heat to a simmer. Add the garlic and yellow onion and saute till onion begins to become golden. Stir in lamb, potatoes, bay leaves, thyme, rosemary, salt and pepper.
Steps to make Lamb stew:
- In a large bowl with lamb, season with salt and pepper add flour and combine to coat every piece. Meanwhile heat a cast iron pot and add oil to it.
- Add lamb pieces to the pot in batches to brown each side of every piece, roughly 2minutes each side. Repeat the process until the last batch and remove to set aside.
- In the same pot, add garlic and cook for 60seconds. Next add diced onions and cook until browned.
- Next add tomato puree, combine with onions and garlic mixture. Next add crushed tomatoes, stir everything together before adding back lamb pieces.
- Next add paprika, mild chilli,rosemary and combine everything together. Next add water enough to cover the meat.
- Open in between and taste for salt, adjust accordingly and let the stew cook until the soup is thickened and reduced enough to serve.
- Serve with Mashed potatoes or Basmati and or steamed Jasmine rice, or any side of choice.
