- boil beet root with skin for 20 minutes or until it's easy to poke with a knife but not too soft.
- wash with tap water to make the beet root cool down and peel them. use a glove or something cuz there will be a lot of purple colour coming out
- cut beets into small cubes and season with rest of ingredients, refrigerate before serving if you want
Place spring lettuce mix in a salad bowl, pour desired amount of dressing over greens, and toss to coat. Place the cubed beets in a steamer basket over boiling water with the lid on. When finished, cool in the refrigerator. Rinse the salad greens, dry in a spinner, and combine in a bowl. Place the shredded beets, carrots, and parsley into a salad bowl.
