The ingredients needed to make Chelo-kabab:
- Make ready 1 lbs Minced meat (goat/lamb/beef)
- Prepare 1 packet breast chicken (cut in cubes)
- Prepare 2 cups basmati rice
- Make ready 4-5 shrimps (peeled and cleaned)
- Prepare For meat (I used mutton,spices)
- Make ready 2-3 cardamom,2-3 cloves,1 cinnamon, 5-6 whole peppercorns, 2 red chilis (all grounded)
- Make ready 2 tbsp cumin powder
- Take 2 tbsp coriander powder
- Prepare 2 tbsp ginger paste
- Take 2 large onions (peeled, cut and pasted)
- Take 3-4 garlic pods
- Take 2-3 green chilis
- Prepare For chicken/shrimp grill
- Prepare 2 tbsp tandoori paste
- Take 2 tbsp yoghurt
- Take 1 tbsp red chili powder
- Prepare 2-3 sticks coriander leaves
- Get 1 lime wedge
- Get 1 capsicum
- Get 1 onion
- Prepare 1 tomato
- Take 2-4 red/yellow pepper
- Get 1 egg poached
- Take 2 tbsp butter
- Prepare 4-5 tbsp flour/corn starch
Chelow kabab is served with accompaniments such as butter, sumac powder, basil, onions, and grilled tomatoes. The main recipe that I am sharing today to accompany our rice is called chelo kabab (chelow kabob or chelo kebab), literally white rice with kebab. The particular variant of meat kabob that I prepared is called koobideh (kubideh), a ground beef kebab. Today, rice is served throughout Iran.
Instructions to make Chelo-kabab:
- Mix the onion, ginger garlic, ground spices with the meat and keep it overnight
- Knead well with flour/corn starch for the meat mixture to thicken.
- Prepare the skewers (I used the bamboo ones so wet it 10mins beforehand), apply oil in palms and take the meat mix in small batches and evenly spread over skewers. Put in the oven at 375 deg f for 20 min turning in between
- For the chicken marination use yoghurt, tandoori and ginger paste with peppercorns, prepare the skewers with capsicum, onion bell peppers.
- For plating put the poached egg on top of rice with dollop of butter
The particular variant of meat kabob that I prepared is called koobideh (kubideh), a ground beef kebab. Today, rice is served throughout Iran. Chelo starts as a plain rice pilaf, but it's very buttery and it's made so that a crunchy golden crust forms on the bottom of the pot. Everyone wants a bite of the crust, but it's traditional in. In a mixing bowl combine all ingredients.
