This lamb curry is made by slow cooking lamb shanks and chunks of lamb shoulder in a flavorful curry base with chopped apple, potatoes, onions, garlic, lemon, and raisins until it is fall apart tender. Lamb curry is a classic dish from northern India and the most popular of all curries.

  2. Take 1 tbsp grated ginger
  3. Take 1 tbsp grated garlic

  5. Take 2 tbsp greek yoghurt
  6. Take 1 tsp turmeric powder
  7. Take 200 g chopped lamb
  8. Get For the curry
  9. Take 2 tbsp ghee
  10. Get 1 tbsp olive oil
  11. Prepare 1/2 tsp asafoetida
  12. Make ready 2-3 curry leaves
  13. Make ready 1 inch cinnamon stick
  14. Take 2-3 cardamom pods
  15. Make ready 4-5 cloves
  16. Make ready 1 tbsp cumin seeds
  17. Prepare 1 tbsp grated ginger
  18. Take 1 tbsp grated garlic
  19. Make ready 2 tbsp red chilli powder
  20. Get 1 tsp turmeric powder
  21. Prepare 1 tbsp curry powder
  22. Prepare 1 tbsp chicken masala
  23. Prepare 1 tbsp coriander-cumin powder
  24. Take 1 medium sized red onion (sliced)
  25. Take 3 small green chillis
  26. Get 1 medium sized green chilli
  27. Take 2 tomatoes, crushed
  28. Take 30 g coriander leaves

  30. Get 2 lamb cubes

Stir in the ginger paste, garlic, chile pepper, and lamb. Pat lamb dry with paper towels and place in a large bowl. Add spice mix to large bowl and toss. Sprinkle the turmeric over the lamb, stirring lightly to coat.

Instructions to make Lamb curry:
  1. Marinating Tip: You can usually do this process the previous night so that the spices would enter the lamb or else you could do it 30minutes before you start cooking.
  2. For marination: - Wash thoroughly the lamb pieces. Take a bowl and mix ginger, garlic, green chillis, red chilli powder, turmeric powder and the chopped lamb pieces topped with yoghurt. Mix well and let it rest for 30 minutes
  3. For the curry: - Please note: you can adjust the amount of oil you would want to use. Pour ghee and oil into a pan and let it heat on medium flame for some minutes. Add asafoetida and after a few seconds add cumin seeds. Let the seeds warm up. The cumin seeds would turn slightly darker than usual colour. Then add curry leaves, cloves, cardamom pods and cinnamon stick. Stir and let it heat until the curry leaves change color slightly.
  4. Add garlic and stir. You should let it fry until you smell it. Don't overcook it as it will turn color and spoil the flavor. Add to this ginger, green chillies and the sliced onions. Saute until the onions become transparent or soften.
  5. Once the onions soften, add the lamb pieces that was marinated. Do not add the yoghurt mix yet. Ideally you might not need to add water since lamb would release some but if you want you can add a little bit. Cover the pan and let it boil for 20-30 minutes until about 85% is cooked. Stir the mix in between if needed.
  6. While you wait for the lamb to boil. You could prepare the masala mix. In a bowl add all the masala ingredients mentioned, turmeric powder, red chilli powder and coriander-cumin powder. Mix well. Ideally Kashmiri chili powder is used for the color and also for the spicy flavor. But you can use whichever red chilli powder you have.
  7. Add the crushed tomatoes to the pan after the lamb appears to be cooked. Pour in the yoghurt mix used for marination. Mix well and then add in the masala mix prepared above. Add the lamb cubes, though this is optional. Add salt as per taste and let it cook for another 20 minutes until oil separates from the spices.
  8. Add in coriander leaves and mix and let it cook for another 5-10 minutes. Serve hot and enjoy 😋.

Add spice mix to large bowl and toss. Sprinkle the turmeric over the lamb, stirring lightly to coat. Toast the fennel seeds as above and set aside. This authentic Indian lamb curry is made with lamb shoulder. It's simmered with fragrant spices, caramelized onions, and Greek yogurt until fork-tender.
