- Take 1/3 cup oil or ghee
- Get 1 bay leave
- Take 5-6 cloves
- Make ready 1 small stick cinnamon
- Get 2 green cardamom
- Make ready 2 black cardamom
- Prepare 1/2 cup crush tomato or purée
- Make ready 1/4 cup beaten yogurt
- Get 1 & 1/2 cup Water or as needed
The spice mix is variable and changing them will alter the flavour considerably. This recipe is my own interpretation of bhuna lamb. Pre-cook the lamb Add the lamb, curry powder, salt and chicken stock to a saucepan. I don't know how big your sauce pan is.
Instructions to make Lamb Bhuna (Fry Lamb Meat):
- Wash and dry lamb meat well. - Take a big bowl add all marination ingredients mix well and make a thick paste then add lamb meat mix well cover and keep in fridge about 3-4 hours or all night. - Heat oil / ghee in a big pan add all hole spices fry for a few mins then add ginger & garlic paste fry 1 mins.
- Then add onion fry well till nice golden brown add marinated meat in pan and fry well till all water goes dry. - Then add tomato fry well add beaten yogurt till all oil or ghee come to the surface. - Add 1 & 1/2 cup of boiled water Cover with the lid and reduce the heat to lowest setting. Simmer for 30-35 minutes, stirring occasionally to check the liquid levels.
- Uncover the pot and increase the heat to high. Cook for another 15 minutes or until the sauce is nice and thick and all liquid is gone. - Garnish with coriander or mint leaves and chillies. - Served with Rice, roti or naan. - - ✅Notes: - You can cook lamb Bhuna in pressure cooker as well.
